Blend that harmoniously combines a native vine with an international one. The Chardonnay grapes that make up 50% of the product are harvested at the end of August, while the native Insolia grapes, which will occupy the remaining 50% of the mass, are harvested during the first ten days of September. Both are subjected to a very soft pressing, from which only the flower must will be used, then left to decant at a low temperature and, subsequently, to ferment for about 20 days at 16-17 C°; it ages in steel on fine lees and sees the union of the cuvee about a month before bottling, after which a further maturation of 2-3 months in glass takes place.

The golden color of the Insolia grapes is found in the glass, in the reflections tending towards gold of its straw yellow dress. Fruity bouquet of cedar, lime and yellow grapefruit, intense and elegant, with notes of prickly pear.

In the mouth it is delicate, with elegant persistence and pleasant minerality.

Excellent on shellfish and sea urchins, white fish first courses and fried fish. Try it with the rigorously raw red prawns of Mazara del Vallo.

Serve at a temperature of 10-12 C°.
