5.95 is not just any number, but indicates the date of birth of Domiziana Tola, daughter of Girolamo, and affectionately called Domì by him. This sparkling wine with a contemporary and modern sip is dedicated to her.
It comes from a blend of Catarratto and Grillo grapes, skilfully cured, selected and harvested in boxes at the right degree of ripeness. The bunches are destemmed, the skins cold macerated with the must and then softly pressed. After a period of aging on the lees of about 4 months, the base wine is made into a sparkling wine in an autoclave according to the long Charmat method, where it remains for another six months before bottling.
At sight it has a pale straw yellow color, crossed by a lively, fine-grained and persistent perlage. The nose exhibits delicate floral notes enriched by hints of exotic fruit and aromatic notes of Mediterranean herbs. Slightly savory, fresh and drinkable in the mouth.
