After a gentle pressing and fermentation in steel, it ages for nine months in the tank and refines in the bottle for the next three months before being put on the market.
Extremely versatile: great with red meat, perfect with Palermo-style baked anelletti, but it works even with a good tuna steak.
Tasting notes
Deep and intense ruby red with purple nuances. Hints of rose hip and cherry, blackberry, cassis and cocoa, on a clear background of Mediterranean scrub. The mouthfeel is full and consistent, velvety in the tannic texture, soft with an excellent length.
